GENEVA -- When you build a world-class athletic training facility, you are not going to put fast food restaurants in it.

SPIRE's commitment to helping all who enter its doors and achieve their potential inspired staff to create a special brand of food service known as Fuel.

Jaime Cordova is head of food and beverage at SPIRE. He explained to Senior Health Correspondent Monica Robins what is so unique about Fuel.

"I think it's the philosophy we take towards the food. For people who have been to SPIRE, its obvious the training facilities are state of the art. World class. So the way we approach the food and beverage department is that it has to approach that philosophy. We don't have high-fat foods, high-cholesterol foods. It's healthy, prepared from scratch, with the freshest ingredients that we could get our hands on, on a daily basis," Cordova says.

Fuel offers something called Whole + Sum. A plate consists of 600 calories or less of specially prepared food, with all natural ingredients. Athletes looking to fill their stomachs will be able to do so with food that won't slow them down.

SPIRE uses as much locally grown food as possible, from produce, meat and even dairy products from some local Amish farmers.

Fuel is open to anyone in the community. Hours of operation are:

  • Lunch  11 a.m to 2:30 p.m.
  • Dinner 5 p.m. to 8 p.m.

  • Breakfast 8:30 a.m to 11 a.m.
  • Lunch 11 a.m. to 4 p.m.
  • Dinner 4 p.m. to 8 p.m.
