My Mom's Chicken Chow Mein
2 whole boneless chicken breasts
4 stalks of celery, chopped
1 medium onio, chopped
1 (14 ounce) can fancy chinese veggies, drained
Cube chicken into small bite size pieces and brown in olive oil in a dutch oven. When the chicken is almost done, add the onion, celery, chinese veggies, salt, pepper and enough water to cover about an inch over the chicken. Let it simmer about an hour. Taste for salt and season more if needed. Then thicken with a mixture of soy sauce and cornstarch. (Start with about 3 teaspoons of cornstarch and enough soy sauce to make a smooth paste. )
Serve over rice or chow mein noodles with more soy sauce.
