Erin Kennedy's Portuguese Bread Pudding!
been in my family for awhile... i love it! easy to make and usually all the ingredients are in the house so you don't need to go shopping for last minute desserts. can also be served warm or cold the next day!
10-12 slices bread (can even be old and hard) broken into small pieces
3 eggs, scrambled
1 cup sugar
1 tsp cinnamon
1 tsp vanilla
one granny smith apple OR one small bag frozen chocolate chips OR 1 cup raisins (most traditional, but I hate raisins, don't tell my mom) (mix above ingredients in large bowl)
1 1/2 cups scaded milk
1 stick butter
preheat oven to 350. grease 9x9 pan.
while assembling the first group of ingredients, scald milk and add butter.
add milk and butter mixture to other ingredients in the large bowl.
bake for 45 minutes. allow to cool and serve warm with ice cream if you're feeling really indulgent, or just by itself. is also great cold the next morning for breakfast, especially if made with the apple!
