Brown Sugar Ham Bites

1 pkg Hawaiian mini rolls

1/2 pound deli ham

1/2 pound swiss

1/2 stick unsalted butter, softened

2 teaspoons mustard

1/4 cup brown sugar

In a small bowl, blend butter, sugar and mustard.  Set aside.  Fry ham in a skillet in a tablespoon of butter.  Remove and cut into squares that will fit the mini rolls.  To assemble, spread the butter mixture on the bottom of each roll.  Top with ham, cheese, and the top of the roll.  Bake at 350 degrees until cheese is melted.  The sugar will carmalize, making this extra delicious!!!

Sweet Potato & Apple Hashbrowns

2 large sweet potatoes, peeled and diced

3 medium apples, peeled and diced

1 medium onion, chopped

2 tablespoons butter

1 tablespoon honey

1/4 cup brown sugar, saly, pepper to taste

In a skillet, melt the butter.  Add onion, potatoes and apples.  Saute until tender.  Season with salt and pepper.  Add brown sugar and honey.  Cook until sugar carmalizes and coats the fruit and veggies.  Serve!
