Strano's Stir Fry

1 package of boneless chicken 
1 can of baby corn 
1 can of sliced water chestnuts 
1 red pepper, sliced 
1 cup of peapods 
1 large onion sliced into chunks
1 cup shredded carrots
1 tablespoon of cornstarch
2 tablespoons of soy sauce
A half a cup of chicken stock
Olive oil
Additional soy sauce

Cut your boneless chicken into bite-size pieces. In a large skillet or wok coated with olive oil over medium-high heat cook the chicken.  When the chicken is almost done, season with salt pepper and a few dashes of soy sauce.  After the chicken cooks completely remove from the pan and set aside.  Add a little more olive oil, then your onion. Cook a couple of minutes until the onion is slightly tender. Add red pepper cook another minute or two then all remaining veggies.  

Whisk together chicken stock, soy sauce and cornstarch. Add your chicken back to the veggies and then the cornstarch/soy sauce mixture. Let cook until mixture thickens. Serve over rice with additional soy sauce if desired.
