1 (10 )inch flour tortilla
1 Rotisserie chicken, skin discarded, meat shredded into bite size pieces
½ cup finely chopped fresh cilantro
1 jalapeno chopped
2 cups Shredded Cheddar
2 Large eggs
1 Cup whole milk
1 Cup All Purpose Flour
1 Teaspoon baking powder
Adjust oven rack to middle position and heat to 450 degrees.
Grease the bottom with cooking spray a 9 inch pie plate.
Press tortilla into prepared pie plate and lightly spray again on top.
Toss chicken, cilantro, jalapenos, 1 cup cheddar cheese, season with ½ teaspoon of salt and ½ teaspoon of pepper.
Place on top of tortilla.
Whisk egg, milk, flour, baking powder and ½ teaspoon of salt in a bowl until smooth.
Slowly pour over filling, then sprinkle remaining cheese on top.
Bake until surface is golden brown, about 20 minutes.
Let cool for about 5 minutes and enjoy
