Sweet & Spicy Peach Wings Confit 9/6/13

Recipe makes 2.5 pounds (approx. 24-30) chicken wings 


For Wings

2.5 Lbs. raw chicken wings
1 quart wing cure (recipe follows)
2 cups lard (or shortening)  

For Wing Cure

¾ lb. kosher salt
½ lb. brown sugar
¼ cup chili flake  

Sweet & Spicy Peach Sauce

¼ cup soy sauce
2 ounces ginger, peeled & roughly chopped
4 ounces garlic bulb
2 limes, zested and juiced
2 cups chili sambal
¼ cup datu pitu vinegar (can find in specialty Asian markets)
1 fresh peach
¼ cup Sir Kensington ketchup    


Confit Wings Toss the wings in wing cure seasoning and let sit for 24 hours After sitting for 24 hours, preheat oven to 200 degrees Melt lard (or shortening) in large roasting pan Slowly drop wings in lard, cover with parchment paper and foil Braise wings for 24 hours Remove wings from lard with a slotted spoon (carefully - they are delicate and will break!).  Let cool Deep fry, or grill wings until golden brown Toss wings with desired amount  

Sweet & Spicy Peach Sauce

Blend all ingredients together in a Vita Mix Blender
