Pasta Carbonara- Serves 4

1oz - Chopped Garlic

1oz- Chopped Shallots

5oz- Prosciutto or Pancetta

2oz- White Wine

2Cups- Heavy Cream

1Cup- Frozen Peas

3 cups- Cooked Orchietti Pasta

5oz- Diced Tomato

2- Egg Yolks

4oz- Romano Cheese

Salt & Pepper to taste

Sauté garlic, shallots & prosciutto. Deglaze with white wine. Add peas and sauté for 1 minute. Add heavy cream until reduced halfway. In another bowl, mix egg yolk and Romano cheese until it forms a paste. Slowly add to cream. Add tomatoes and cooked pasta.
