Ugly Tom: Tomato Salad in a Parmesan Cup

1/3 cup shaved parmesan cheese
1 oz fresh mozzarella cheese
2/3 cup cherry heirloom tomatoes, cut in half
Half clove garlic,minced
2 tsp evoo
1 tsp aged balsamic vinegar
1 large basil leaf, chopped
Salt and pepper to taste like
Cooking spray.

Spray a baking sheet with cooking spray generously in a 6 to 8 inch circle. Place parmesan in a pile in center of sprayed area. Place in a 425 degree convection oven. Bake until cheese has spread out to about a 4 to 5 inch circle and has browned, but is still pliable. When done take out immediately and peel off tray and place on top of a soup cup that has been turned upside down. Let cool 5 minutes. While cooling toss all remaining ingredients together. Remove parmesan bowl from cup. Flip over and place on plate or bowl. Fill with ingredients. Enjoy!
