Chilled Peach Soup

4 cups fresh ripe peaches, peeled and chopped

1/2 cup granulated sugar

1 cup sour cream

2 cups peach nectar

1 cup prosecco wine

1 cup peach yogurt, mixed well

Fresh mint

In a food processor or blender, puree peaches

Add sugar and sour cream and blend well.

 

Stir in peach nectar and wine.

 

Chill until ready to serve.

 

Serve garnished with a dollop of peach yogurt and fresh mint.

 

Serve 8
