2 cups arugula
1quart strawberries, cleaned, hulled, quartered
1 English cucumber, sliced
1/2 ed onion, minced
1 red bell pepper, diced
1 tbsp. Extra Virgin olive oil
Salt and fresh cracked pepepr, to taste
Place strawberries, cucumber, onion, peppers and olive oil in a large bowl. Season to taste with salt and pepper. Gently fold together until well-combined. Add in arugula just before serving, combine and top with mint pesto.
1 cup fresh mint
1/4 cup slivered almonds
1/4 cup Extra Virgin olive oil
1/2 lemon, juiced
Salt and fresh cracked pepper, to taste
Placed mint and almonds in a food processor, pulse to combine. With machine running, pour in olive oil and lemon juice. Season to taste with salt and pepper.
