German Potato Salad Recipe
6 oz smoked bacon bits
1 cup chopped sweet onion
Fresh peeled garlic (Optional) 2-3pc
1 Tbls Flour
2 cups water
1 cup apple-cider vinegar
1/2 cup brown sugar
1/2 cup sugar
1 small ct vegetable bullion
2 oz chopped parsley
Black pepper to taste
5 ct large potatoes
1. Place the potatoes into a pot and fill water to cover the potatoes.
Bring potatoes to a boil for about 15-20 minutes or until is cooked cool down, peel, and thinly slice about 1/8th inch
2. Fry bacon bits in a large deep skillet (Wok) until crispy brown, then remove the bacon from the pan and leave aside.
3. Caramelize the onions in the bacon grease, then stir flour into the onions.
Fill up with water, apple cider vinegar, brown sugar, white sugar, vegetable bullion, chopped parsley let boil for a couple minutes, then add sliced potatoes and cook for another 10 minutes on low heat. Garnish with fresh scallions or chives.
*The bacon dressing you can prepare ahead of time and leave in stored in refrigerator, for convenience.
