Michael Lyons: Fruity Pebbles Crusted Tilapia 4/18/13

1 Tablespoon Olive Oil

1 egg (for egg wash, add 1 tablespoon water)

1 Cup all purpose flour

1 Tablespoon Lemon Pepper spice blend

1 Cup Fruity Pebbles, crushed, medium grind

1 Teaspoon lime zest

2 Tilapia filets

Begin with creating your three part breading process. In one container, mix the flour and spice blend (feel free to use any spice blend that you prefer with seafood). In the second container, combine the egg and water and mix together.  In the last container, combine the crushed cereal and lime zest.

Begin by seasoning each tilapia filet with salt and pepper. Lightly dredge the tilapia in the flour mixture, then the egg wash, and finally the cereal blend. Set aside for a minute while you complete the process with the remaining fish.

In a saucepan over medium, heat olive oil.  Carefully saut√© each piece of tilapia until done, approximately 2-3 minutes a side. Be careful not to burn the cereal crust.
