Lobster & Crab Fritters

1 lb Lobster meat raw rough chopped

1 lb Lump Crabmeat picked through for any shell

1/4 cup Red Bell Peppers diced small

1/4 cup Yellow Bell Peppers diced small

1/4 cup Scallions sliced thin

2 tbsp Garlic chopped

1 Lemon zested

1 tbsp Old Bay Seasoning

3 Eggs

1 cup All Purpose Flour

1 tbsp Baking Powder

1 tsp each of Salt and Pepper

     In a mixing bowl, combine chopped lobster and crabmeat with the peppers, scallions, lemon and garlic.  Mix well and add the old bay seasoning.  Crack the eggs into the mixture and combine well.  Add flour and mix to a paste like consistency.   Mix in the baking powder, salt and pepper and let sit for 5 minutes.  In a deep fryer or thick gauge sauce pan, heat oil.  Mold the mixture into small balls, rolling gently and not packing them firm.  Drop carefully into the hot oil and cook for 1-2 minutes depending on the size of the fritters.  The inside should be steamy when broken open.

Lemon Basil Sauce

1 cupMayonnaise

2 tbsp Lemon Juice

1/4 cupBasil chopped

Pinch of Salt and Pepper

     In a food processor or blender, combine all ingredients and pulse lightly till combined and smooth consistency is reached.
