Desiray Cross: Cinnamon Apple Chicken 12/3/12

2 pounds boneless skinless chicken breast
1 1/2 sticks butter
1 1/2 teaspoons cinnamon
1 large white onion sliced
10 ounces cleaned button mushrooms
3 medium Gala Apples - peeled, cored and sliced
10 pitted prunes diced
2 Tablespoons brown sugar
1/2 cup of white wine
3/4 cup heavy cream


Cut chicken into bite size pieces, In heavy pan melt 1/2 stick of butter add chicken and dust with 1/2 teaspoon of cinnamon, salt and pepper, brown chicken. Remove chicken from pan and add 1/2 stick of butter, onion and mushrooms cook onion until translucent, add to chicken. Melt 1/2 stick butter in pan add wine to deglaze, let reduce slightly, add brown sugar, 1 teaspoon cinnamon, apples and prunes cook until sugar is melted then add the cream and warm through. Add chicken, mushrooms and onions to pan and let simmer for 10 minutes stirring occasionally.
