Hollie's Butter Pecan Pancakes

2 cups bisquick
1 cup milk
2 eggs
1 teaspoon grated orange rind
2 teaspoons vanilla extract
1 cup chopped pecans

Whisk together all ingredients except pecans and butter in a large bowl.  Set aside.

In large skillet or griddle, melt a couple tablespoons of butter.  Using an ice cream scooper, ladle pancakes into hot butter.  Sprinkle each with chopped pecans.  When the pancakes start to bubble, flip them to cook the other side.

Serve with maple syrup!
