Hollie Strano: Chicken with Garlic and Capers 11/7/12

Hollie's chicken with a garlic & capers sauce!

1 pkg thin sliced boneless chicken

1 stick butter

Olive oil 

10 cloves garlic, minced

1 jar capers

1 bunch parsley, chopped

1 tomato, diced

1 lemon

1 small pkg flour

1 carton chicken stock

1 container Grated Parmesan cheese

In a large skillet coated with olive oil, melt a tablespoon of butter.

In a plastic grocery bag, add 1 cup flour...1/2 cup Parmesan cheese...1 teaspoon of salt & 1 teaspoon pepper.

Shake chicken and flour in a plastic grocery bag coating thoroughly.

Cook chicken... About 7 minutes a side.  You want it golden brown and crispy on each side.  Remove chicken from skillet and transfer to another plate once it's cooked.  Add a little more olive oil to the skillet.  Then add your garlic.  Cook until fragrant.  Add capers and tomatoes.  Cook another 5-7 minutes.  Add the juice of a lemon and a couple cups of chicken stock.  Simmer 10-15 minutes.  Add the remaininng butter... cut into pieces.  this will thicken tge sauce and give it a nice glossy appearance.  Add parsley.  Then add chicken back to pan, and cook another 5-10 minutes.

Sprinkle with Parmesan cheese before serving.

Serve with a side of risotto!
