Drunken Chicken - Serves 4


1 whole 3# fryer chicken
½ can domestic beer
2tbl montreal seasoning
2oz olive oil
2 c favorite bbq sauce

Preheat oven to 350. Rub chicken with olive oil and montreal seasoning. Open can of beer and taste for quality, or pour off half so that it doesn't overflow during cooking. Place chicken on can in a roasting pan.  Cook chicken for approximately 1 hr or until internal temperature of 160, basting with bbq sauce every 15 min.

Dortmunder Barbeque Sauce - Makes 3 cups


¼ cup minced onion
¼ cup apple cider vinegar
2 tbl brown sugar
3 cloves garlic
2 cups ketchup
1 tbl tomato paste
1tbl worschteshire
1 ½ tsp liquid smoke
6 oz dortmunder

Simmer onions and garlic, add vinegar, dortmunder, brown sugar, worschteshire
