Parmesan Pepperoni Pasta
1 cup pepperoni, diced
1 medium onion, chopped
7 cloves garlic, minced
1/2 cup red wine
I can Italian style stewed tomatoes
8 ounces cream cheese
1 cup grated Parmesan cheese
1 lb penne pasta, cooked al dente
In a large skillet, cook pepperoni on medium heat 5-10 minutes. Add onion and sauté til tender. Add garlic. Cook another 5 minutes. Add red wine... Let simmer 5-7 minutes letting the alcohol cook out. Add tomatoes. Let sauce simmer on medium low another 10 minutes. Add cream cheese and stir until the cream cheese is folded in and blended into the sauce. Stir in the Parmesan cheese and season with salt and pepper to taste.
Pour sauce over the freshly cooked penne pasta and toss, evenly coating. Garnish with chopped fresh basil!
