Herb and Garlic Rubbed Beef Tenderloin With Red Wine Reduction Serves 4
4 servings of 8oz Tenderloin
¼ c chopped Garlic
2T chopped Thyme
1 shallot chopped
1 c Red wine
Salt and pepper
Rub tenderloin with Garlic, Thyme, Shallots, And Salt and Pepper.
Heat Saute pan, add 2oz of butter, and sear Filets on both sides for approx. 3 min a side until crust forms. Remove filets and transfer to a sheet pan and bake in the oven for 10 min at 400'. Add wine to the pan and reduce by half. Remove from heat and whisk in the butter. Place filets on plate and spoon over sauce.
