Avocado and Mango Crab Salad
Serves 4-6

Ingredients for Salad

    1# Lump Crabmeat ( may substitute claw,petite lump or special)

    2 Ripe Avocados- diced in 1/2" pieces

    1 Mango- diced in 1/2" pieces

    1/2c Cilantro leaves

    1 Red pepper -cut in thin strips( may add yellow or orange peppers for color)

    1 Jalepeno-  minced

    1 Head Bibb lettuce

    Salt and pepper


Ingredients for Dressing

    2 Limes (juiced)

    1/4 c Rice wine Vinegar

    1T Honey

    1c Olive Oil

    salt and pepper


In a small bowl add the Lime Juice, Vinegar, and Honey. Slowly whisk in Olive Oil until it is incorporated. Season with Salt and Pepper

In a seperate bowl add Crab, Mangos, Avocados, Peppers, and Cilantro. Coat with the Dressing and season with Salt and Pepper.

Break Bibb Lettuce up and Place on a plate or platter. Place Crab Salad on top and Serve.
