Frozen Peas 1 lb
Tomatoes 3 each
Red Onion 1 cup diced
Mayonanaise 3/4 cup
Plain Yogurt 1/2 cup
Red Wine Vinegar 1/2 cup
Dijon Mustard 4TBSP
Salt 1 tsp
Black Pepper 1/2 tsp
Bacon 8 strips
Cook the Bacon and dice into 1/4 inch size.
Rinse the peas in a strainer under warm water and drain well.
In a mixing bowl add the mayo, yogurt, Dijon, Vinegar, salt and pepper, wisk well till smooth.
Add the diced tomatoes, onions and peas and toss.
Add the bacon just before serving so it stays crunchy. You can omit the bacon if you want to make it a meatless dish but the bacon gives it a great smoky and salty flavor. Serve immediately, the salad will keep overnight but the peas will start to discolor within a day.
