Bac Nguyen: Spicy Shrimp Kabobs

SPICY SHRIMP SKEWERS

Marinade:

 ½ cup soy sauce

½ cup pineapple juice

2 tbsp honey

2 tbsp Sriracha hot sauce

2 tsp minced lemongrass

1 tsp minced jalapeno

2 tsp granulated garlic

1 tsp black pepper

Skewers:

1 lb. raw shrimp, 21-25 peeled & deveined (shell on)

1 cup fresh pineapple, cut into 1-inch cubes

1 cup zuccini, cut into 1-inch cubes

1 cup red bell pepper, cut into 1-inch cubes

 

  1. Combine all ingredients for marinade in a mixing bowl.
  2. Marinate shrimp and vegetables for about 10 minutes.
  3. Heat grill to extra hot. Grill skewers on high heat for 2-3 minutes per side, brushing liberally with excess marinade throughout.
  4. Serve with your favorite dipping sauce and/or steamed rice.
