Deviled Eggs

80 eggs- hard boiled
1/2 cup chives sliced
1T Siracha
4T capers
1/3 cup Lemon Juice
1 teaspoon sweet paprika
1 teaspoon hot smoked paprika
3 cups mayonnaise
Salt to taste

1. Carefully cook eggs in boiling water for 10 minutes
2. Set timer. Cook for EXACTLY 10 minutes
3. Shock in an ice bathe
4. Peel off shell
5. Split in half.
6. Remove egg yolf
7. Place all yolks in robo coupe with lemon juice. Blend.
8. remove from robo coupe, place in a large mixing bowl. Fold in all other ingredients with a rubber spatula.
9. Season with salt.

Top with:
Poached Shrimp
Pickled sliced radishes
Micro Greens
