Brunch Flatbread

Flatbread Shell                                                   1
Roma Tomatoes sliced thin                               2
Olive Oil                                                             2 oz.
Sunnyside up eggs                                             3 each
Salt and Pepper                                                  1 tsp
Bacon, very large diced                                     3 oz
Fine Herbs                                                          1 tbsp
Queso Fresco                                                     2 oz



Place sliced roma tomatoes on the flatbread shell, making sure to cover all of the surface area. Drizzle oil on top of roma tomatoes, spread out the queso fresco. Season with salt and pepper. Bake in a 500 degree oven until crispy. Cut flatbread into 8 slices then spread around the bacon and fine herbs. Place the three friend eggs in the center of the flatbread.
