Strano's Garden Marinara
7 cloves garlic, minced
1 medium onion, chopped
10 tomatoes, chopped
1 container mushrooms, sliced
1 cup basil, chopped
1/4 cup oregano (fresh), chopped
1 lb. rigatoni, cooked al dente
In a large skillet, add a couple tablespoons of olive oil and bring it to a medium heat. Add onion and garlic. Saute until fragrant. add mushrooms, cooking about 5 minutes. Then add tomatoes. Allow veggies to cook down. Then add a good cup of white wine. Let simmer 10-15 minutes so the alcohol evaporates and the flavors come together. Add herbs. Season with salt and pepper. Add 1 tablespoon of butter at the end. This will give the marinara a glossy finish.
Toss with rigatoni. Serve with parmesan cheese and additional chopped basil on top.
