Savory Pork Tenderloin

1 pork tenderloin

1 & 1/2 tablespoons minced garlic

1 & 1/2 teaspoons cornstarch

1/4 teaspoon ground ginger

1 (6 ounce) can of pineapple juice

1/4 cup soy sauce

olive oil

Slice pork into 1/2 inch thick slices.  flatten slices with palm of hand.  Coat a large, non-stick skillet with olive oil.  Place over medium heat until hot.  Add pork and cook 3 minutes on each side until browned.

Combine soy sauce and remaining ingredients.  Stir well.  Add to pork skillet.  Bring to a boil, reduce heat, and simmer 3 to 5 minutes.  Remove pork from skillet and spoon sauce over pork.

Party Rice

1 package prepared rice (I used a wild rice...you just pop it in the microwave for a couple minutes)

In a skillet coated with olive oil, saute 1 small onion, minced.  Add 1 tomato, chopped.  Season with salt and pepper.

Add onion and tomato to rice.

Chop up walnuts and dried cranberries.  Fold into rice.  Now it's a party!

Serve with pork.
