My Mom's Beef Stew

1 package of lean stew meat

1 large onion, chopped

2 celery stalks, chopped

1 whole tomato

3 bay leaves

1/4 cup ketchup

1 bunch of parsley, chopped

4-5 medium potatoes, peeled and chopped

4 large carrots, peeled and chopped


salt, pepper

In a dutch oven, coated with a couple tablespoons of olive oil, saute onion until fragrant.  Add meat and brown.  Season with salt and pepper. 

Once the meat is browned, add enough water to cover the meat about an inch over.  Add ketchup, bay leaves, tomato and celery.  Simmer 2 hours.  Add carrots, potatoes and parsley.  Cook another hour.  Top with pieces of refrigerated biscuits and additional chopped parsley.  Cover and cook until biscuits are cooked through.
