Hollie's Stuffed Shrooms
1 package of mushrooms, cleaned, stems removed & reserved
1 small onion, chopped
1 teaspoon minced garlic
1 cup shredded colby jack cheese
dash of hot sauce
a few dashes of worcestershire sauce
1 stick butter, melted
1 cup seasoned italian bread crumbs
1 teaspoon italian seasoning
1/2 teaspoon black pepper
Chop the mushroom stems. In a medium bowl, combine stems, onions, cheese, breadcrumbs, garlic, hot sauce, worcestershire, italian seasoning and pepper. Pour melted butter over mixture and combine.
Take a spoonful of the mixture and fill each mushroom cap, molding as you stuff. Sprinkle mushrooms with paprika. Bake at 350 for 30 minutes.
Hollie's Tailgate Chicken
I package of boneless chicken breasts, cut into pieces
1 cup flour
2 eggs beaten
1 cup fritos, 1 cup doritos, 1 cup seasoned croutons...crushed and combined
In a plastic bag, shake the chicken with the flour so it's evenly coated. Dip the chicken in egg, then the crushed chip/crouton mix.
Fry on medium heat in a large skillet, about 10 minutes a side.
