Hollie's Dish of the Week: Spicing Up Your Kid's Brown Bag Lunch

Mommy Mix

This is so much better than any mix you'll buy because it's made by you!

Equal parts of:

Cereal (I used corn pops)

Mini Marshmellows

Raisens

Nuts (optional...depending on allergies)

Fruit snacks

Mix in a large bowl--------DONE!

Kiddie Mac Salad

Mini-spiral pasta, cooked al dente

1 seedless cucumber, diced

3 large carrots, diced

1 large tomato, diced

1 cup peas (I just used frozen)

1 cup chopped fresh basil

Ranch dressing

Mix pasta and veggies in large bowl.  Add enough dressing to coat...but you don't want it to be "soupy".  Season with salt and pepper to taste.

Refrigerate.  Keep chilled with an ice pack in your child's lunch.

Tortilla Cream Cheese &Chicken Wraps

Whole Wheat Tortillas

Cream Cheese

Roasted Chicken Breast, shredded

Mixed Salad Greens

Spread cream cheese on tortilla.  Top with lettuce and chicken.  Season with salt and pepper.  Wrap tightly.  Store in plastic wrap and refrigerate.  Keep chilled with an ice pack in your child's lunch.

Have fun with school lunches!  Variety is key!
