Corn Muffins

1 cup AP flour

1/3 cup sugar

1 cup yellow cornmeal

2 teaspoons baking powder

1/2 teaspoon salt

2 eggs

1/2 cup buttermilk

1/4 cup butter, melted

1/4 cup corn

1/4 cup red pepper, diced

1/4 cup green onions, chopped

Preheat oven to 350. Grease or paper line about 12 muffin cups (or grease an 8x8 inch baking dish). In a large bowl, whisk together flour, cornmeal, sugar, salt and baking powder. Stir in eggs, buttermilk and melted butter until well combined. Stir in corn, peppers and green onions. Pour batter into prepared pan. Bake for 20-25 minutes or until a toothpick inserted into the center of the muffin comes out clean. Cool in pan on a wire rack. Serve with corn chowder.
