Strano's Blueberry Chicken
One package of boneless chicken breast
Balsamic vinegar, about a half a cup
Olive oil, about a half a cup
One container of fresh blueberries
Six cloves of garlic, chopped
1/2 Stick of butter
One bottle of your favorite blue cheese dressing
One bunch of fresh thyme
Roll your chicken breast thoroughly in the Cajun seasoning. In a large skillet coated in olive oil melt your butter over medium heat. Add the chicken breasts. Cook about 7 to 10 minutes a side. Add balsamic vinegar, garlic and Blueberries, reserving about 1/2 cup blurberries. Remove the chicken and sliced in medallions. Add back to the simmering sauce. Add your fresh time. Turn off the heat.
To serve, transfer onto a large platter. Drizzle blue cheese dressing over top. Garnish with additional fresh blueberries and thyme.
