Hollie Strano: Key Lime Chicken 6/26/13

Strano's Key Lime Chicken

1 pkg boneless chicken breasts

6 limes- the juice from 5, slice 1

8 ounces cream cheese

1/2 cup heavy whipping cream

1/2 cup chicken stock

1 sweet yellow onion, chopped

1 large tomato, chopped

1 bunch fresh sage, chopped

1 bunch garlic, minced

1 bag pepperidge farm crushed stuffing - chicken flavor- 2 cups

1 stick butter

Olive oil

In a large skillet,  sauté chicken in a few tablespoons of olive oil until cooked through.  Remove chicken and cut into bite sized pieces, set aside.

To prepare stuffing, melt butter in a skillet.  Add stuffing crumbs.  Toss to coat.  Set aside.

In the same skillet, add a little more olive oil.  Sauté onion until fragrant.  Add garlic and tomatoes, simmer another 5 -10 minutes.  Add chicken back to the pan. Add cream cheese. Blend until melted.  Add 1/2 cup fresh lime juice, 1/4 cup heavy whipping cream and a 1/2 cup chicken stock.  Simmer another 5 minutes or so.  Add sage.  

To serve-- sprinkle some buttered stuffing crumbs on your dish.  Top with a scoop of the key lime chicken.  Sprinkle additional stuffing crumbs on top and garnish with a slice of lime.  

Serve with a salad!  So yummy!
