Steve Schimoler: Crop Strawberry Tart 6/3/13

1 pint strawberries hulled and cut in quarters

1 sheet of puff pastry cut into 8 inch circle

2 TBSP sugar

1 TBSP corn starch

1 TBSP Minced Fresh basil

1 cup heavy cream whipped

1 tsp vanilla extract

 

  • Cut the puff pastry into a circle
  • Stem and cut the berries into quarters
  • Add the sugar and corn starch over the berries evenly and toss well to evenly coat them
  • Add the berries to the middle of the pastry and fold the edges up around the berries and a pleated fashion
  • Bake on parchment paper and cookie sheet at 350 degrees for approximately 15 minutes or until golden brown.
  • Make the whipped cream and add 1 tsp vanilla extract and the minced basil
