Recipe for Sweet & Sour Prawns (Shrimp)
10 oz Shrimp, size 16-20
4 oz Green Pepper (Diced in to ¾ inch square)
4oz Red Pepper (Diced into ¾ inch square)
4 oz Pineapple Chunks
2 Tablespoon Diced Scallion
½ Tablespoon minced ginger
½ Tablespoon minced garlic
2 Tablespoon diced scallion
1 Tablespoon cornstarch and water mix
1 Teaspoon sesame oil
3 Tablespoon soybean oil.
Sweet & Sour Sauce, mix the following together
3/4-cup chicken stock
1 Tablespoon Dark Soy sauce
1 Tablespoon Light Soy sauce
3 Tablespoon of Chung Gong Rice Vinegar
Dash White pepper
½ teaspoon minced ginger
½ teaspoon minced garlic
2 Tablespoon white cooking wine
- Sauté shrimp in very hot wok with 2 tablespoons of oil, till it's cooked but still tender, dish aside.
- Oil the wok and stir all vegetables till 50% cooked but still firm, set aside.
- Heat wok till hot, oil, put ginger, garlic, and scallion in. Pour Sweet and Sour Shrimp sauce in wok and cornstarch and water mixture in. Heat till sauce thickens, put vegetables and shrimp in wok. Mix with sauce, stir-fry for 5 minutes, sprinkle sesame oil in, dish up and serve.
