INGREDIENTS

EXRTA VIRGIN OLIVE OIL

BONELESS SKINLESS CHICKEN BREASTS (POUNDED THIN)

BREADCRUMBS OR FLOUR

1-2 EGGS BEATEN

½ CUP OF WHITE WINE

BUTTER ½ TO 2/3 STICK

1-2 LEMONS

CAPERS (2 TBLSP)

FRESH CHOPPED PARSLEY

COOK

HEAT OLIVE OIL IN PAN AT MEDIUM HEAT

COAT CHICKEN WITH EGG BREADCRUMBS AND DROP IN PAN

LET COOK FOR 90 SECONDS ON EACH SIDE TIL GOLDEN BROWN

TAKE THE CHICKEN OUT AND SET ASIDE

POUR YOUR WINE INTO PAN AND LET BUBBLE/REDUCE A LITTLE

SQUEEZE LEMON AND ADD BUTTER CHUNKS

ADD CHICKEN BACK TO PAN, REDUCE HEAT TO LOVE AND COVER FOR A MINUTE

TOP OFF WITH CAPERS AND FRESH PARSLEY
