Hollie's Autumn Apple Hash
3 granny smith apples, diced
3 honey crisp apples, diced
2 sweet potatoes, peeled & diced
2 large white potatoes, peeled & diced
1 large onion, chopped
2 large carrots, peeked and sliced
1 teaspoon garlic, minced
2 teaspoons pumpkin pie spice
1/2 stick butter
Couple tablespoons of olive oil
1/2 cup chopped fresh parsley
Salt and pepper
In a large skillet, heat olive oil and butter on medium heat. Add potatoes. Season with salt and pepper. Let cook about 30 minutes, stirring often so nothing sticks. Add carrots, garlic and onion. Saute another 10-15 minutes. Add pumpkin pie spice. Add apples (I leave the skin on!). Cook another 10-15 minutes. Season with additional salt and pepper to taste. Add parsley.
This is a delicious Autumn side dish! It goes great with pork and chicken!!
